What You Need:

  • 1 pound of any cold cooked meat (equal quantities of fat and lean)
  • 1 egg yolk
  • 1 teaspoon cream or evaporated milk
  • Pepper and salt
  • Bread fingers
  • 1-2 finely chopped shallots
  • Coating batter
  • Deep fat for frying

  • How To Cook:
    1. Mince or finely chop the meat, add pepper and salt and the finely chopped shallots and mix to a paste with the egg yolk and cream.

    2. Spread on narrow fingers of bread, dip in coating batter and fry in deep fat till a nice golden-brown.
