What You Need:            (To Make: 1 cake)

  • 5 oz sour milk cheese
  • 5 oz sugar
  • 5 oz butter or margarine
  • 5 eggs
  • Juice and grated rind of 1 lemon
  • 5 oz ground almonds, walnuts or hazelnuts
  • 1 oz flour

  • How To Cook:
    1. Cream together the cheese, butter, nuts, sugar, egg yolks, lemon juice and grated rind.

    2. Carefully fold in the stiffly beaten egg whites and the flour.

    3. Pour the mixture into a greased and lined 8-inch baking tin, and bake for ¼ hour in a hot oven (450°F), then for a further ½ hour in a moderate oven (350°F), until the mixture is dry inside when tested with a skewer.
