French Pork & Bean Casserole
(Cassoulet)
What You Need:
  • 1 pound pork cut in ½-inch cubes
  • ½ pound pork sausage links, cut in half
  • ½ cup chopped onion
  • 2 medium cloves garlic, minced
  • 1 cup chopped tomato
  • 2 cans (11½ ounces each) condensed bean with bacon soup
  • ½ soup can water
  • ¼ cup Chablis or other dry white wine
  • 1 medium bay leaf

  • How To Cook:
    1. Brown pork and sausage in skillet.

    2. Add onion and garlic; cook until tender.

    3. Pour off fat; add remaining ingredients to skillet; mix well.

    4. Poor into 2-quart casserole; bake in preheated 375°F oven 1 hour, or until done.

    5. Remove bay leaf and serve.

    NOTE:
        There are many ways to prepare "cassoulet". You can use lamb or even pieces of duck or goose, as they do in southeastern France.
