Lebanese Shish Kebab
What You Need:
  • 2 large red bell peppers
  • 2 large green bell peppers
  • 2 large yellow onions
  • 1 tablespoon finely chopped fresh mint leaves
  • 3 large cloves garlic, peeled and crushed
  • ˝ cup olive oil
  • 3 pounds lean boneless leg of lamb, all excess fat trimmed, and cut into 1˝ - inch cubes
  • Salt and freshly ground black pepper to taste

    How To Cook:
    1. Quarter the bell peppers lengthwise. Remove the cores and seeds and cut into 1-inch pieces.

    2. Peel the onions and cut lengthwise into 6 wedges. Separate the wedges into "leaves" and set aside.

    3. Make a marinade of the mint, garlic, and olive oil.

    4. Place the lamb cubes alternately with the onion and pepper pieces on skewers. Paint with the marinade and let stand for 1 hour before broiling.

    5. Sprinkle with salt and pepper to taste. Broil on the grill or cook under the broiler in your oven.

    6. Cook strictly to taste €¦ but do not overcook, about 8 minutes for rare, 12 for well done.

    To Serve: 9 - 10
