Spinach Side Dish
What You Need:
  • 3 pounds spinach (about 4 fresh bunches)
  • 1 teaspoon salt

    DRESSING
  • 2 tablespoons light soy sauce
  • 2 teaspoons sesame oil
  • 1 tablespoon Sesame Salt
  • 1 tablespoon Korean red pepper threads

  • How To Cook:
    1. Remove the tough part of the spinach stems and wash very well. In a large shallow pot bring 1˝ cups of water to a boil.

    2. Add the salt and spinach. Simmer the spinach for 5 to 10 minutes until it cooks down, stirring occasionally.

    3. Drain and cool. Squeeze out excess water and place the spinach in a bowl. Mix the light soy sauce and sesame oil.

    4. Add to the spinach along with the remaining ingredients. Toss well and chill.

    To Serve: 6 - 8
