Summer Fruit Salad With Cottage Cheese

Weight-watchers will like this colorful salad for luncheon or supper. Substitute plain yogurt for the salad oil, if desired.

What You Need: |

|
2 small cantaloupes
1 pound cottage cheese
2 cups seedless white grapes
2 cups cherry tomatoes, stemmed and washed
1/3 cup salad oil
2 tablespoons fresh lemon juice
2 tablespoons honey
2 tablespoons chopped fresh mint leaves

How To Cook: |
|
|
1. Cut cantaloupes into thick, crosswise slices; remove rind and seeds; place on a platter.
|
2. Put spoonfuls of cottage cheese in the centers of the cantaloupe slices.
|
3. Top and surround with grapes and tomatoes.
|
4. Combine oil, lemon juice, and honey. Serve with the salad.
|
5. Garnish salad with the mint.
|
