Thai Orange Salad
(Ma Ho)
This fruit salad from Thailand is not only unusual but has a fascinating name, Ma Ho, or galloping horses. It can be made with fresh pineapple as well as oranges.

What You Need:
  • 2 garlic cloves, crushed
  • ˝ cup minced onions
  • 2 tablespoons peanut or salad oil
  • ˝ cup minced or ground raw pork
  • 2 tablespoons tamarind or lemon juice
  • 2 teaspoons sugar
  • Pepper to taste
  • 3 tablespoons finely chopped peanuts
  • 6 thick navel orange slices
  • 2 shredded red chilies
  • 1/3 cup chopped fresh coriander or parsley

  • How To Cook:
    1. Saute garlic and onions in oil in a medium skillet until tender.

    2. Add pork, tamarind or lemon juice, sugar, and pepper; cook about 15 minutes, or until pork is done.

    3. Remove from heat; add peanuts and cool.

    4. To serve, place a spoonful of the pork-peanut mixture over each orange slice and garnish the tops with chilies and coriander or parsley.

    To Serve: 6
