Grape Leaf Dolmas
What You Need:
  • 1 pound minced lamb or beef (from fatty part of meat)
  • 1 chopped onion
  • ¼ cup uncooked rice
  • 1 teaspoon chopped mint
  • 1 teaspoon chopped dill
  • Salt and pepper
  • 1 tablespoon tomato sauce (optional)
  • Grape Leaves
  • 2 tablespoons butter
  • 1½ cups water (optional)
  • Yoghourt or lemon

  • How To Cook:
    1. Place meat in bowl and add onion, rice, mint, dill, salt and pepper, and tomato sauce if desired. Knead well.

    2. Drop into boiling water and boil for 5 minutes, then drain.

    3. Holding leaf in palm of hand, with top or glossy side of leaf down, cut off hard stem and place small portion of stuffing on broad end of inside of leaf.

    4. Fold ends of leave over stuffing and roll like a cigarette.

    5. Place grape leaf dolmas in saucepan in rows and add butter and water.

    6. Put a plate on top of dolmas to keep them in place, and cover the saucepan.

    7. Cook over medium heat for 35-40 minutes.

    8. May be served with yoghourt or lemon.
