1. Peel the aubergines and cut in thick slices. Cover with a little salt and leave for an hour.

2. Drain and dry. Fry in butter until golden brown, then put aside.

3. In the same butter fry the onion, finely chopped, and the meat, cut into small pieces.

4. Season, just cover with water and simmer until the meat is tender.
|
5. Arrange the aubergines on top and cover with a layer of sliced tomatoes.
|
6. Simmer very gently until the sauce is thick-about ¾ hour.
