Plain Rice Pilaff
(Aadi Pilav)
What You Need:
  • Rice

  • How To Cook:
    1. Pour 2 pints of water in a saucepan and put it on the fire.

    2. When boiling, throw in 1 pound of the best rice, well washed, add salt to taste and boil it until the whole of the liquid is absorbed.

    3. Put in a saucepan ˝ pound of fresh butter and set it on the fire until it boils.

    4. Pour it all at once over the rice, put the cover over the pan, wrap a wet cloth round it to prevent the steam from escaping and keep it on the hob for ˝ hour.

    5. Take the lid off and stir it once round with a fork.

    6. You will find that each grain is swollen and is well separated.

    7. Dish up in the shape of a dome and serve hot.
