Baked Fish With Tomato Sauce
What You Need:
  • 2 pound turbot, cod or halibut
  • Salt and pepper
  • 1 cup oil
  • 2 oz raisins
  • 2 oz blanched almonds or pistachio nuts
  • 1 pound tomatoes for tomato sauce

  • How To Cook:
    1. Wash the fish well and slash diagonally with a knife; put into a well-greased baking tin and sprinkle well with salt and pepper.

    2. Pour most of the oil over it; put it into a moderately hot oven (400°F) and cook, basting occasionally.

    3. Meanwhile, fry the nuts and raisins in a little oil.

    4. Put the fish on to a serving dish and just before serving pour the sauce over; sprinkle the nuts and raisins on top.

    TOMATO SAUCE:
    1. Wash tomatoes and cut them into quarters, put into a saucepan with some salt and pepper, and the oil in which the nuts and raisins were fried.

    2. Cover the pan and cook until the tomatoes are reduced, and then strain the mixture.

    3. Rinse out the pan, put the sauce back in it and reduce it (uncovered) until very thick.

    To Serve: 2 - 4
