Fried Rice Pastries
(Rice Braewats)
What You Need:
  • ½ pound flour
  • ¼ pint milk
  • 5 oz rice
  • 1 teaspoon salt
  • 2½ oz sugar
  • 1 tablespoon orange water
  • 1½ teaspoons cinnamon
  • ¼ pint olive oil (approx)

  • How To Cook:
    1. Make about 20 sheets of pastry with the flour, as for Treed (p. 377), making those about 9 inches across.

    2. Cook the rice well in a little water, add the sugar and cinnamon and stir over the heat for ¼ hour.

    3. Then put in the milk and salt and cook for a further 10 minutes, adding the orange water and stirring until the mixture forms a thick paste.

    4. Put it into a dish to cool.

    5. Roll small tablespoons of this mixture in a sheet of pastry, making a roll or packet about ½ inch thick and 3½ inches long.

    6. Brown the pastries in hot oil on both sides and serve at once on a hot dish.

    7. These pastries are eaten for breakfast.
