Chicken Feast
(Chicken Luau)
What You Need:
  • 2½ pound chicken, cut up
  • 1 cup hot milk
  • Flour
  • 4 oz shredded coconut
  • ½ cup butter or margarine
  • 2 pound spinach, washed
  • 2 tablespoons minced onion
  • Salt

  • How To Cook:
    1. Lightly dust the chicken with flour.

    2. Heat the butter in a large pan and cook the chicken until evenly browned; add 1 teaspoon salt and 1 cup water, cover and simmer for about 30 minutes, or until tender.

    3. Meanwhile, pour the milk over the coconut; let it stand for 15 minutes, and then simmer for 10 minutes.

    4. Cut the spinach into large pieces, cook with the onion and ½ teaspoon salt in ¼ cup water for about 5 minutes, then drain.

    5. Add to the chicken with the coconut, and simmer for 3 minutes.

    To Serve: 6 - 8
