Chicken Feast
(Chicken Luau)
What You Need:
  • 2 pound chicken, cut up
  • 1 cup hot milk
  • Flour
  • 4 oz shredded coconut
  • cup butter or margarine
  • 2 pound spinach, washed
  • 2 tablespoons minced onion
  • Salt

  • How To Cook:
    1. Lightly dust the chicken with flour.

    2. Heat the butter in a large pan and cook the chicken until evenly browned; add 1 teaspoon salt and 1 cup water, cover and simmer for about 30 minutes, or until tender.

    3. Meanwhile, pour the milk over the coconut; let it stand for 15 minutes, and then simmer for 10 minutes.

    4. Cut the spinach into large pieces, cook with the onion and teaspoon salt in cup water for about 5 minutes, then drain.

    5. Add to the chicken with the coconut, and simmer for 3 minutes.

    To Serve: 6 - 8
