Lau - Lau
This dish together with sweet potato may be used on the same menu and called a "poi supper." If canned poi is available, it should be served also. The meal may be finished off with slices of fresh pineapple.

What You Need:
  • Freshly washed spinach or taro leaves
  • Salt
  • Ti leaves or aluminum foil
  • 2 - 3 oz fat pork
  • 2 - 3 oz stewing beef

  • How To Cook:
    1. To each lau-Iau allow 3-6 leaves of spinach, one piece each pork and beef.

    2. Sprinkle with a little salt.

    3. Roll the spinach and meat in ti leaves (usually three per lau-lau) or wrap in aluminum foil.

    4. Place lau-laus in a steamer.

    5. Steam for about 5 hours (or it can be cooked in a pressure cooker for 1˝ hours).

    6. About 1˝ hours before the lau-lau are done; sweet potatoes may be placed in with the lau-Iaus and steamed with them.

    To Serve: 2 - 4
