Brazilian Black Beans
(Feijoada Completa)
What You Need:
  • 1 pound salt pork
  • 1 pound sausages
  • 1 salted tongue
  • ¼ pound bacon
  • 2 pound black beans
  • 1 pound dried meat
  • Onion, tomato, parsley, bay leaf

  • How To Cook:
    1. Wash and soak the meats overnight and wash and soak the beans in a separate bowl.

    2. Next day drain the water off the meats and add to the beans, cover with water and boil until beans are tender from 3 - 4 hours.

    3. Fry onions, tomatoes, parsley and bay leaf and add to bean pot; boil until the broth thickens.

    4. Before serving remove the salt meats on to a separate dish, mash the beans a little to thicken the broth and serve in a tureen.

    5. Serve with rice.

    6. Peel and cut some oranges and serve on separate plates.
