Maple Syrup Cream
What You Need:
  • ¾ pint milk
  • 3 tablespoons corn flour
  • ½ teaspoon salt
  • 20 tablespoons maple syrup
  • 2 egg yolks, beaten
  • 2 tablespoons butter
  • 2 egg whites

  • How To Cook:
    1. Heat the milk in the top of a double boiler.

    2. Combine the corn flour, salt and 16 tablespoons syrup; add to the hot milk and stir until thick.

    3. Add a little hot mixture to the beaten egg yolks and stir into the corn flour.

    4. Cook over boiling water until the mixture thickens again.

    5. Add the butter and cool slightly.

    6. Beat the egg whites with the remaining 4 tablespoons maple syrup until stiff.

    7. Fold into the mixture. Serve cold.
