Irish Soda Bread
What You Need:
  • 1 pound flour (white or white and whole meal)
  • 1 teaspoon cream of tartar (2 teaspoons if sweet milk is used)
  • 1 teaspoon salt
  • 1 teaspoon bicarbonate of soda
  • ˝ pint (approx.) sour milk, buttermilk or sweet milk
  • 1 oz fat

  • How To Cook:
    1. Sieve the dry ingredients and rub in the fat.

    2. Make a well in the center and mix in enough liquid to give soft, spongy dough.

    3. Turn out on to a lightly floured board and shape quickly into 1 - 2 round cakes, place on a floured baking sheet and score with a knife.

    4. Bake in a moderately hot oven (425°F) for 30 - 40 minutes, till well-risen, lightly browned and firm underneath.
