Welsh Pikelets
What You Need:
  • 8 oz self-raising flour
  • 1 teaspoon bicarbonate of soda
  • 2 oz caster sugar
  • A pinch of salt
  • ½ gill boiling water
  • ¼ pint buttermilk
  • Lard for frying

  • How To Cook:
    1. Put the flour, sugar and salt into a basin and gradually mix to a thick batter with the buttermilk.

    2. Dissolve the soda in half a gill of boiling: water and add to the mixture.

    3. Fry tablespoonful of the batter in hot fat as for pancakes; turn when half-cooked.

    4. Serve hot, with butter.

    To Serve: 2 - 4
