Lamb's Liver And Gammon
(Iscas)
What You Need:
  • 1 pound lamb's liver, cut into slices
  • 1 clove of garlic
  • 1 bay leaf
  • ½ pound gammon rashers
  • Salt and pepper
  • ¼ pint red wine
  • 1 tablespoon chopped parsley
  • 1 tablespoon olive oil

  • How To Cook:
    1. Put the sliced liver and gammon rashers into a fireproof dish, add the wine, oil, garlic, bay leaf and seasoning, cover, and cook in a moderate oven (350°F) for 30-40 minutes.

    2. Sprinkle the dish with the finely chopped parsley before serving.

    To Serve: 2 - 4
