Beans And Pork
(Fabada)
What You Need:
  • 1 pound butter beans
  • 6 slices of chorizo (Spanish garlic sausage)
  • 6 slices of gutifara (Spanish blood sausage)
  • ˝ pound lean pork
  • Olive oil
  • 1 onion
  • 1 clove of garlic
  • ˝ pint tomato puree
  • Salt and pepper

  • How To Cook:
    1. Soak the beans overnight in cold water; the next day, cook slowly in salted water until tender, then drain.

    2. Cut the pork into neat pieces and fry in the olive oil until lightly browned.

    3. Fry the sliced onion with the chopped garlic, then add the tomato puree and seasoning.

    4. Put the pork, sausages and butter beans into a casserole, pour in the tomato sauce, cover with a lid and cook in a moderate oven (350°F) for about 40 minutes, till the meat is tender.

    To Serve: 4 - 6
