Fillet Steak With Madeira
What You Need:
  • 4-6 fillet steaks
  • 2 oz butter
  • Olive oil
  • 1 tablespoon chopped parsley
  • Salt
  • ¼ pint Madeira wine
  • Pepper
  • 1 lemon

  • How To Cook:
    1. Put the meat on a board and brush over with the oil.

    2. Beat thoroughly with a rolling pin until the pieces are ½ - ¾ inch in thickness. Season well.

    3. Heat the butter in a frying pan and put in the steaks.

    4. When the meat juices appear on the surface, turn the meat and cook on the other side.

    5. Place the fillets on a hot dish, sprinkle well with chopped parsley and keep hot.

    6. Pour the Madeira into the pan, simmer for a few minutes, then pour it over the steaks and garnish with lemon.

    To Serve: 2 - 4
