Lamb Cutlets Navarra
What You Need:
  • 4 lamb cutlets
  • Salt and pepper
  • 1 oz lard
  • 1 ˝-lb. slice of gammon, cut ˝ inch thick, and diced
  • 1 onion, chopped
  • 1 pound finely chopped tomatoes
  • ˝ pound chipolata sausages

  • How To Cook:
    1. Season the cutlets with salt and pepper and fry them in the fat; when cooked, transfer to a casserole.

    2. Cook the gammon and onion in the fat in which the cutlets were cooked.

    3. When the onion is golden-brown, add the tomatoes, season, and cook for 10 minutes.

    4. Pour this sauce over the cutlets, cover the casserole and cook in a moderate oven (350°F) for 20-30 minutes.

    5. Fry the chipolata sausages separately.

    6. Place the cutlets in a hot dish and garnish with the sausages.

    7. Alternatively, serve the cutlets with the sausages in the casserole.

    To Serve: 2 - 4
