What You Need:

  • Perch fillets
  • Butter
  • Flour
  • ½ cup white wine

  • How To Cook:
    1. Soak and coat some fish fillets as in Fried Perch Fillets.

    2. Cook them in butter in a moderate oven (350°F), allowing each side 5 minutes.

    3. Take them out as soon as they are cooked.

    4. Leaving the cooking dish in the oven, put into it 3 knobs of butter mixed with flour and discreetly seasoned; allow this to get light brown then dilute with ½ cup good quality white wine and serve with the fillets.
