Fish And Rice Casserole
(Sayadiah)
What You Need:
  • 1˝ pound cod or haddock
  • Oil for frying
  • 1 onion
  • 3 cups rice
  • 3 cups water
  • Salt
  • 1 teaspoon allspice

  • How To Cook:
    1. Flake the fish and fry in the oil.

    2. Drain and in the same oil fry the onion, cut in rings, until the oil is well flavored.

    3. Wash the rice, cover with boiling salted water and add the strained, onion-flavored oil.

    4. Simmer for about 15 minutes, stirring occasionally, until all the liquid has been absorbed.

    5. Stir in the spice and allow the rice to steam for a few minutes.

    6. Put alternate layers of rice and fish in a greased casserole and bake in a moderate oven (350°F) until brown.

    7. Turn out on to a round dish to serve.

    To Serve: 4 - 6
