The Shah's Pilau
What You Need:
  • cups Patna rice
  • 1 cup raisins
  • 3 tablespoons sugar
  • 1˝ pound lean mutton
  • Olive oil
  • 4 onions
  • 1 cup clear stock
  • 2 oz butter
  • Salt and pepper

  • How To Cook:
    1. Soak the rice in salted water for ˝ hour and also soak the raisins in 2 cups of hot water, with the sugar.

    2. Cut the meat in small cubes and brown in a little oil. Fry the onions, chopped coarsely, in the same oil.

    3. Mix meat and onions and place in casserole. Drain rice and raisins, mix and spread on top of meat and onion mixture.

    4. Pour the stock over and dot with butter. Sprinkle with salt and pepper.

    5. Cook, uncovered, in a moderate oven (375°F) for about 45 minutes, stirring occasionally and adding more stock if it appears too dry.

    To Serve: 3 - 4
