Fish And Potato Casserole

What You Need:
  • 2 large salt herrings
  • 2 tablespoons melted butter
  • 1 pound sliced boiled potatoes
  • 3 eggs
  • 1 pint milk
  • 1 tablespoon chopped onion or spring onion
  • ˝ teaspoon pepper
  • 1 oz dried breadcrumbs

  • How To Cook:
    1. Soak the fish for 6 hours, skin and bone them and cut in long strips.

    2. Butter a baking dish and put in a layer of potato, then one of herring, with a little onion; repeat, finishing

    3. With a potato layer and pour melted butter over the top.

    4. Beat the eggs, add the milk and pepper pour into the baking dish and sprinkle with breadcrumbs.

    5. Bake in a moderate oven (350°F) for 30 - 40 minutes, or until browned.

    TIP:
        Tinned salmon may be used instead of salt herring to make this dish.
