Barbecued Leg Of Lamb

What You Need:
  • One 7-pound leg of lamb, boned and rolled

    MARINADE
  • 1 cup olive oil
  • ˝ cup fresh lemon juice
  • 2 cups red wine
  • 1 tablespoon minced garlic
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 2 tablespoons dried oregano
  • How To Cook:
    1. Combine all marinade ingredients in a bowl.

    2. Add lamb and marinate in the refrigerator for 4 hours, turning two or three times.

    3. Bring to room temperature before cooking.

    4. Skewer lamb and place on rotisserie.

    5. Barbecue for 2˝ hours, basting with the marinade to the desired degree of doneness.

    NOTE:
        Lamb can be cooked in an indoor rotisserie oven. Preheat oven to 400°. Bake for 2 to 2˝ hours, basting frequently with marinade.
