UDON: Thick wheat-flour noodles, available in Japanese markets. A good substitute is No.2 spaghetti.
UGLI: A thick-skinned hybrid citrus fruit that was developed on Jamaica. A cross of grapefruit, orange and tangerine, it is called ugli because of its lumpy appearance.
UMEBOSHI: Small pickled plums, available bottled in Japanese markets.
UNI: Prepared sea urchin, available a bottled in Japanese markets.
