VEGETABLE PEAR (chayote, christophine): Round or pearshaped white to dark-green tropical squash, 3 to 8 inches long. It may be smooth or corrugated and is sometimes covered with soft spines. The firm, crisp flesh is more delicate in flavor than the familiar summer squash. Available year round in some Latin American markets.
VEGETABLE STEAK: A vegetarian food that looks like a small beefsteak but is made from wheat gluten. Sold in cans in Oriental and health-food stores. No substitute.
VIGO COLORING: Common substitute for the yellow color of saffron. Can be found in small envelopes in any Latin American, Mexican, or Cuban market.
VRASTO (Greece): Boiled or poached dish.
